This is a personal favourite in my family. My sister always demands I make it when she comes over! We love to share a glass or two of Shiraz to compliment the spices in the lamb.

Ingredients

8 Spring Lamb Chops

1 Red chilli seeded & chopped

2tbsp chopped fresh coriander

1 tbsp chopped fresh mint

1tsp salt

1tsp soft brown sugar

1tsp garam masala

1tsp garlic pulped

1tsp ginger pulped

175ml natural low fat yoghurt

2 tsp corn oil

  • Trim lamb chops to remove excess fat ( should resemble a rack of lamb )
  • Mix coriander, mint, sugar, salt, garam masala, garlic & ginger. Add yoghurt.
  • Coat the lamb in the yoghurt & marinade over night.
  • Heat the oil in a non-stick pan. Add chops & cook over a medium heat turning once for 15-20 minutes.
  • Serve with a crisp salad. Serves 4.
